Every December, we release a special one-time brew to celebrate our anniversary. To celebrate our 6th year of operations, we have created "Ryeleywine", a barleywine with a touch of malted rye. Gold medal and Best-of-Show at Copa Cervecera del Mundo Maya.

Barleywine
|
Gold medal winner at the 2013 Mexico Professional Beer Competition, our very rich and strongly malty English barleywine tastes of intense malt flavors, complex, multi-layered, dark caramel, toffee, and/or molasses. With a malty sweetness up front the finish is moderately dry with complex alcohol flavors. There is a fairly high fruitiness with a dried-fruit character and a balanced hop bitterness. Alcohol aromatics are moderate. The aroma of this rich beer include bready, toasty, toffee, molasses, and/or treacle notes. The color is a very clear dark amber with ruby highlights and an off-white head with low head retention. High alcohol and viscosity may be visible in “legs” when this beer is swirled in a glass. Full-bodied with a velvety, luscious texture and a smooth warmth from alcohol is present. Carbonation is moderate. The richest and strongest of our ales, this beer should be savored sip after sip.

¡Diablos! (Belgian Golden Strong)

Silver medal winner at the 2016 Summer Beer Fest Challenge Chihuahua, ¡Diablos! by Cervecería Dos Aves is a Belgian Golden Strong ale with a bright, clear yellow-gold appearance. You'll notice a snow-white, fluffy head, which is fed by an impressive, persistent bead of carbonation. After a few sips, a feathery lace coating appears on the glass. The aroma features a gentle, slight bubblegum and chardonnay-like notes of pear. It has a deceivably light body with a silky mouthfeel. The flavor has hints of banana and light malt sweetness, the finish is dry and appetizing, with an unyielding, lingering bitterness. There is a suggestion of spice throughout.

German Hefeweizen

The aroma and flavor of our Cervecería Dos Aves German Hefeweizen with yeast is decidedly fruity and phenolic (spicy). The phenolic characteristics are often described as clove-, nutmeg-like, mildly smoke-like or even vanilla-like. Banana-like esters are present at low levels. This beers is made with at least 50 percent malted wheat, and the hop bitterness is quite low. Hop flavor and aroma are absent allowing the spiciness to shine through. Our Hefeweizen is dry and brightly carbonated with a full body. The color is very pale. Because yeast is present, this beer will have yeast flavor and a characteristically fuller mouthfeel and will be appropriately very cloudy.

Pumpkin Ale

Malt balance is the key to our seasonal Cervecería Dos Aves Pumpkin Ale, providing a base for spices associated with the United States holiday season. Spices include our own special blend of allspice, nutmeg, cinnamon and ginger, those evocative of the American holidays of Thanksgiving and Halloween. We brew this unique beer with a range of caramel-type malts, particularly those that add dark fruit and caramel flavors. The spices support and blend well with the base beer style. Rich, malty and nutty flavors including raisin and fig. Bitterness and hop flavor are restrained so as to not interfere with the spices and special ingredients. The color is dark brown and clear with a well-formed head that is off-white and the body is medium full with moderately high carbonation, allowing this beer to finish full and satisfying. At only 5.5% you can enjoy several of these beers with your American friends at their thanksgiving dinner and still have room for pie.

Ryecerahops (Rye IPA)

Winner Best-of-Show at Copa Cerveza Bajio 2017. Ryecerahops by Cervecería Dos Aves is a reddish-amber Rye IPA that is decidedly and unapologetically hoppy and bitter, just how we like it! This moderately strong (7.4% ABV) Rye India Pale Ale showcases American hop varieties and plenty of rye malt, which gives Ryecerahops its special spicy black pepper-like and slightly earthy flavors and aromas. The balance is hop-forward with a big rye malt presence. Caramel flavors that blend well with the bold spice notes of the rye malt are also clearly present. If that isn’t enough, we dry hop this beer to give it a boost of fresh hop aroma. Ryecerahops features a clean dry finish that allows the citrus, pine and a hint of tropical fruit hop character to shine through without taking away from the rye. The hop bitterness and rye flavors subtly linger into the aftertaste.

Stout Seca (Dry Stout)

Our Cervecería Dos Aves Dry Stout has an initial malt and light caramel flavor profile with a distinctive dry-roasted bitterness in the finish achieved through the use of roasted barley. Coffee-like with some slight acidity. A black beer with a medium to light body and thick head. Fruity esters are minimal and overshadowed by the malt with moderate to high hop bitterness, and roasted barley character.
