Production Brewer Position

(haz clic aquí para leer en español) Cervecería Dos Aves is an award-winning craft brewery located in San Miguel de Allende, Guanajuato, Mexico.  We are a direct-fire, manual mash-in 5BBL production brewery producing 15BBL batches and utilizing 15BBL Brite Tanks for clarification, carbonation and packaging.  We are in search of a production brewer with a minimum of two-years experience in production brewing to join our team.  The person in this position has will have the opportunity to advance to head brewer after demonstrating the ability to do so.  The qualified candidate must be thorough, diligent and clean.  Excessive attention to detail and knowledge of sanitation, and a full working knowledge of brewery operations is a must, including but not limited to the following:
 

• Recipe development with understanding of science and water chemistry
• Yeast harvest and management
• Laboratory protocols
• Use of 5BBL direct-fire manual mash-in brew system or larger
• Equipment maintenance
• Able to lift a minimum of 25 kg
• Safely handle and work with chemicals, pumps, contents under pressure and other hazards that are common to a brewery environment
• C.I.P. sanitation procedures
• Glycol cooling system and heat exchange wort transfer
• Fermentation vessel to purged brite tank transfer
• Packaging including keg filling and bottle line operations
• Brewery production scheduling record keeping
• Oversite of production personnel
  
• Maintain raw material inventory
• Cleaning and maintenance of all lines
• Available for special events
