All of our beers are hand-crafted at our production brewery in San Miguel de Allende. We make the styles described below on a regular basis, but do not supply all styles to all places. If you don't see the one you like at at your favorite establishment, please let the management know!
IPA Imperial (United States West Coast Style Imperial India Pale Ale, IIPA or Double IPA)

Our Cervecería Dos Aves IPA Imperial ( Imperial IPA, Double IPA or IIPA) is an intensely hoppy, very strong pale ale without the big malt flavors of our American Barley Wine. As a tribute to historical IPAs, our "IPA Imperial" is strongly hopped, but clean, lacking harshness. Drinkability is an important characteristic; this is not a heavy, sipping beer. It also does not have much residual sweetness or a heavy character grain profile.

Pale Ale (United States West Coast Style Pale Ale)

Gold medal winner at the 2015 Mexico Professional Beer Competition. Our American style Cervecería Dos Aves Pale Ale is deep golden to copper in color. Characterized by fruity, floral and citrus-like American-variety hops that produce medium to medium-high hop bitterness, flavor, and aroma. Note that our version of this style of this beer has certain floral, fruity, citrus-like, piney, resinous flavors. This classic ale has a medium body and low to medium maltiness and a touch of caramel character.

Stout Imperial (Russian Imperial Stout)

Gold medal winner at the 2015 Mexico Professional Beer Competition. Rich and complex our Russian Imperial Stout (R.I.S.) tastes of intense roasted grains, maltiness, fruity esters, hops, and alcohol. The roasted malt character can suggest bittersweet or unsweetened chocolate, cocoa, and/or strong coffee and take on a complex, dark fruit character. The hop aroma of our R.I.S. is low but the medium bitterness is balanced with the Chinook hop variety and an alcohol character is present. The color is jet black with a well-formed head, although head retention is moderate. High alcohol and viscosity is visible in “legs” when beer is swirled in a glass. This beer has a full-bodied, velvety, luscious texture and carbonation is low. We're proud of this intensely flavored, big, dark ale.

Triple Belga (Belgian Tripel)

Bronze medal winner at the 2014 Mexico Professional Beer Competition. Tripels are often characterized by a complex, sometimes mild spicy character and our Cervecería Dos Aves Tripel is no different. With this beer you will taste clove-like flavor and aroma at low levels. Also evident are yeast-generated fruity esters, including banana. This pale/light-colored ale has a sweet light finish. With a medium body there is an equalizing hop/malt balance and a perception of low to medium hop bitterness. There is a perceived alcohol presence. Chill haze is evident at low serving temperatures and this beer may exhibit slight yeast haze.
